PEORIA, Ill. – After months of waiting for an answer, Pop Up Chicken in Peoria’s Warehouse District has been approved for a liquor license.
Owner Aaron Francis said on the business’s Facebook page that they will finally be able to “put that big beautiful green bar to use.”
Mayor Rita Ali, who also serves as the city’s liquor commissioner, approved the license.
Peoria’s Liquor Commission and the City Council both approved Pop Up’s application site in January, after a third try. Mayor Ali had been hesitant to give her recommendation.
Following approval, Francis said that he can finally operate the restaurant, located at 800 SW Adams, at 100-percent. A grand opening is expected soon.
Francis operates another Pop Up Chicken restaurant in Bloomington, where he has already had a liquor license.
